Tasting note Pencarrow Sauvignon Blanc
Intense fragrant, dry white wine with aromas of grapefruit, passion fruit and green herbs. Pure, crispy fresh and fine in texture. Lively and nicely fruity in the final.
The Pencarrow Sauvignon comes from the basement of Palliser Estate, one of the excellent domains of New Zealand. Winemaker Guy MacMaster uses first-class grapes from organically processed vineyards. They produce a round and seductive white wine, of course in the characteristic, splash-proof and expressive style of this relatively young and ultramodern wine country.
The vineyards are located in Martinborough, the southernmost wine region on the North Island. Due to its location it is slightly warmer here than in the famous Marlborough on the South Island. You can taste that in the wines. This is also the case in the Pencarrow, which is ripe and intense in taste. The top wines of Palliser mature on the yeast cells ('sur lie') with a regular bâtontonage (stirring the wine and yeast).
Guy MacMaster also uses this technique for the Pencarrow Sauvignon, but limits the duration to 3 months. This gives the wine a nice juicy taste, while maintaining the wonderful aroma intensity. An asset to our range!
