Description
Anyone who's visited Sicily may be familiar with them. Palmentos: the characteristic stone buildings where grapes were once pressed by foot, the juice fermented, and the wine aged. There was a time when virtually every Sicilian family owned one. For hygiene reasons, making wine in palmentos is no longer permitted. However, those that still exist bear witness to the island's rich winemaking tradition. And this range of house wines is a tribute to that.
Grillo is a true Sicilian classic. After Catarratto, it's the most widely planted white grape on the island. Understandably, as Grillo thrives in Sicily's warm, dry climate. The grapes for Palmento are harvested by hand, plot by plot. This method ensures that only the optimally ripe grapes are used for the wine.
In the cellar, a modern vinification process follows, involving pressing, fermentation, and aging in stainless steel tanks. The result is a seductive, fruity Grillo with a pure, smooth flavor and a surprisingly modest alcohol content for a wine from a Mediterranean climate. Enjoy it on its own, with seafood, or light pasta dishes. Delicious!
