Patrick Piuze is a household name in the Chablis region. After running his own wine bar in Canada called Le Pinot Noir, he decided he wanted to start making wine himself. Not pinot noir, but chardonnay became his grape. He left for Burgundy and gained experience with greats such as Olivier Leflaive, Jean-Marie Guffens and Jean-Marc Brocard. In 2008 he started his own domain. His star rose in no time and now he has become an integral part of the established order.

Piuze does not describe himself as a winemaker, but as a winegrower: his focus is entirely on terroir expression. Although he owns no vineyards himself, he maintains good long-term relationships with a number of winegrowers in and around Chablis. This allows him to buy the best quality grapes from old vines from some of the finest Chablis vineyards.

Les Boutots comes from a vineyard east of Chablis, near Tonnerre. Wine made here is normally labeled as Bourgogne blanc. However, with his focus on terroir and to champion the appellation, Piuze chooses to market his wine as Bourgogne Tonnere.

Les Boutots is a beautiful, refined white Burgundy, offering great quality for the price. A great opportunity for a wine from such a top producer! Drink it up to about five years after the harvest.
 
Drink at
Complex, dry white wine that pairs perfectly with hearty fish dishes, such as cod, turbot and sole, or seafood.
 
Tasting note
Pale yellow colored wine with a subtle odor expression of lime, hazelnut and flint. Reasonably full and juicy in structure with a nice freshness. The finish is chalk dry, refined and persistent.
