Pasquale Clemente makes fascinating wines in the hinterland of Naples. The wine region around the town of Benevento benefits from cool and elevated vineyards with a volcanic background. The wines of Masseria Frattasi are unique! This is due to the combination of terroir and the remarkable organically grown primroses such as greco fiano coda di volpe and aglianico.
The aglianico grape is very common in southern Italy and provides different styles of red wine depending on maturity and vinification. Pasquale Clemente chooses an accessible style with the Caudium and does not harvest the grapes until the first ten days of November! It is only after this long period that the peel of the grape reaches full maturity with tannin and many flavors.
After the usual first and second fermentation the Caudium ripens for about nine months on casks of French oak. Because of both its strength and freshness, this wine tastes great with grilled meat dishes.
