Beautiful bright red wine with a distinct aroma of fresh red fruit such as cherries and red berries. Delicious with both cold dishes and slightly spiced dishes from the grill.
Pasquale Clemente makes fascinating wines in the hinterland of Naples. The wine region around the city of Benevento benefits from cool and high-altitude vineyards with a volcanic surface. The wines of Masseria Frattasi are unique! This is due to the combination of terroir and the remarkable organically grown primal grapes such as greco fiano coda di volpe and aglianico.
The aglianico grape is common in southern Italy and produces different styles of red wine depending on maturity and vinification. Pasquale Clemente opts for an accessible style with the Caudium and only harvest the grapes in the first ten days of November! Only after this long period does the skin of the grape reach full maturity with tannin and many flavorings.
After the usual first and second fermentation, the Caudium matures for about nine months on casks of French oak. Because of its strength and freshness, this wine tastes delicious with grilled meat dishes, among other things.
