Domaine de L'Arjolle, South of France
Winemaker François Teisserenc has been responsible for the wines of Domaine de l'Arjolle near Béziers in the South of France since this year. However, the influence of François has been noticeable for a few years now. The style of the wines is changing, following the trend towards more elegance and refinement. François achieves this by extracting less tannin from the grape skins during fermentation and then applying less oak wood aging. The transition from the 'old' to the new Cuvée Cabernet Merlot is a good example of this.
This harvest is characterized by perfectly ripe grapes without any mold or rot and the very late harvest time. The merlot grapes were harvested at the beginning of October and the cabernet grapes only between 20 and 25 October. Other winemakers are easily seduced and make powerful dark-colored wines with such a good harvest. But for this cuvée, François allowed the skins of the grapes to ferment for a shorter period of time.
For maturation, he selected barrels from the famous tonnelier Seguin Moreau, who produces barrels from Burgundy that mainly provide elegance and refinement. The wine from these barrels is merged with wine that has matured exclusively in concrete tanks. This produces a beautifully balanced red wine with the appropriate name Équilibre.
