This blend of 'greasy' viognier and 'fresh' sauvignon grapes gives a beautiful, balanced wine. The name Équilibre has been chosen very well: both grape varieties are exactly 50% present and the wine is perfectly balanced. The grapes are fermented after fermentation in stainless steel tanks with temperature control. The wine then ripens for six months in the dregs of spent yeast cells, where the wine is regularly stirred. Thanks to this technique, white wine has a fuller taste and more balance.
