The Accordini's ripasso comes from the hilly zone of the classico district and is made in a special time-consuming and therefore expensive way. The best part of the red Valpolicella wine is kept aside. In the month of February following the harvest, the wine is supplemented with the fermented grapes - the vinacce - of the concentrated amarone wine. This creates a second fermentation that completely changes the wine: there is much more concentration in color, aroma and taste. Balance strength and flexibility!
