The red Chassagne-Montrachet Vieilles Vignes is a pure, fruity red Burgundy with beautiful oak, a touch of spice, and a seductive suppleness. It's the ideal wine to pair with oven-roasted chicken or a mild Burgundy cheese.
Bouard Bonnefoy, The pearls from France
The wines of Bouard-Bonnefoy are what you might call hidden gems. This artisanal family winery's own production is very limited. The family delivers most of the grapes from eight hectares of its own vineyards to Pierre-Yves Colin Morey, one of Burgundy's great cult winemakers.
Fabrice Bouard and his wife Carinne's winery is located in Chassagne-Montrachet, right next to Domaine Ramonet's plot in the premier cru Morgeot vineyard. Most of their vineyards are located in Chassagne and planted with old vines—a legacy from Carinne, who represents the fourth generation of a Chassagne winemaking family.
It will come as no surprise, then, that the family's specialty is Chassagne-Montrachet. The lion's share is, of course, white, but Fabrice and his daughter Clara also make very charming red Chassagne in small quantities. This delightful Vieilles Vignes, for example.
The Pinot Noir grapes are harvested by hand from old vines in various Chassagne plots. Fabrice uses a decades-old wooden basket press for pressing – a family heirloom. Vinification is traditional: the wine ferments spontaneously and ages for a year in oak barrels.
