Burgundy Hautes Cotes de Beaune


Refined white Burgundy with a seductive, well-dosed oak influence and light buttery aromas. The taste kicks in with a pleasant freshness. The finish is long and aromatic. Particularly good combination with luxury fish, such as sole and turbot or just like that.


Ideal Chardonnay


Even the somewhat remote vineyard in the Hautes Côtes de Beaune gets a great added value in the hands of Jean Michel Chartron. His quality requirements are high and that is actually logical as a producer of precious grands crus in Puligny and even Chevalier-Montrachet.
 
The Chartron approach is traditional and therefore, remarkably enough, also contemporary. Jean Michel works the vineyard organically (although not officially certified) and is reluctant to use new, 'toasted' oak. Also for this beautiful Hautes Côtes de Beaune, just like for its grand crus, the chardonnay grapes ferment exclusively in oak barrels.
Jean Michel uses one to five year old casks so that a refined dose of wood is achieved. This is followed by a maturation of eight months on the lees and another three months in tank, just before bottling. The result is a luxurious, refined white Burgundy. Irresistibly beautiful!
