It's not always necessary to reinvent the wheel. The young Sébastien Dampt understands this all too well. With this approach, he's one of the new generation of winemakers putting Chablis back in the spotlight. Winemaking here is done as it used to be: traditionally and without frills. As simple as that approach may sound, the results are impressive.
The Dampt family's roots go back 150 years to the winemaking history of Chablis, the northernmost region of Burgundy. For generations, the Dampts have specialized in the restrained, chalk-dry, and slender Chardonnay style so typical of the region. Sébastien was therefore brought up with the craft. After training in Beaune, he gained experience both domestically and internationally. In 2007, by then a seasoned veteran, he launched his own estate.
Sébastien harvests the grapes for his Chablis Villages from several plots, the largest of which boasts vines that are no less than 45 years old. Vinification is then minimalist: after pressing the grapes, the wine ferments and ages in stainless steel tanks. This not only creates the refined, fully dry Chablis character but also imparts a light flint aroma, a testament to the wine's terroir expression.
This is Chablis as it was meant to be. Bone-dry, chalky, and with notes of Granny Smith apple and citrus. Delicious as an aperitif, or with oysters and light fish dishes.
Shelf life
Drinkable from one year after harvest and can easily be kept for up to four to five years.
