Description

It is not always necessary to reinvent the wheel yourself. The young Sébastien Dampt has understood that too well. It is precisely with this approach that he is one of the new generation of winemakers who put Chablis back in the spotlight. Wine making takes place here as in former times: traditional and unadorned. As simple as that approach may sound, so impressive is the result.

The roots of the Dampt family go back 150 years in the winemaking history of Chablis, the northernmost part of Burgundy. For generations the Dampts have specialized in the understated, chalk-dry and slender style Chardonnay that is so typical for the region. Sébastien was given the profession with the spoon. After training in Beaune, he gained experience at home and abroad. In 2007 he started his own domain, now tried and tested.

The grapes for his Chablis Villages harvest Sébastien from various parcels, the largest of which has as many as 45 years old sticks. Vinification is then minimalistic: after pressing the grapes, the wine fermentes and ripens in stainless steel tanks. This not only provides for the refined, full-bodied Chablis character, but also for a slight flint aroma as a sign of terroir expression in the wine.

This is Chablis as Chablis is intended. Bone dry, lime-like and with notes of granny smith apple and citrus fruits. Delicious as an aperitif, or with oysters and light fish dishes.

Shelf life
Ready to drink from one year after the harvest and easy to keep for up to four to five years.
