Description _

Monique, François and Nicolas are the 5th generation on this beautiful domain in the village of Bué, this Sancerre terroir so beloved by connoisseurs. The dominant soil type consists of limestone soil that is particularly suitable for the cultivation of Sauvignon grapes. At least if you like a fresh, aromatic style, almost chalky taste that many sommeliers call 'mineral'. Because that typifies the good Sancerre's from Bué. The Millet family works with respect for nature, feeding the vineyards only with organic fertilizers and working the soil in such a way that good aeration is created with a rich diversity of biological life. In the cellar, no pumps are used for the most important activities, such as bottling, but Millet uses gravity with much less disruptive influence on the wines. A kind of 'slow cooking' but in the wine cellar. The result is an impeccable, crisply dry Sancerre.

 

Drink at

Slim, soft dry white wine to drink as an aperitif, or with a green salad with goat cheese and avocado, baked plaice with green herbs or wok dish with white cabbage, lentils and caraway seeds.

 

Tasting note

Beautiful white wine with an expressive scent of granny smith, melon, lime zest and boxwood. The taste is refined with a good filling, invigorating acidity and beautiful grapefruit notes in the long finale.

Beautiful now and will keep for at least 6 years after harvest.
