Description
Bourguignon Laurent Delaunay understands how to make a good Pinot Noir in an elegant and refined style. In 2005, he bought the small boutique winery in the village of Marseillette from the talented Australian Nerida Abbott and introduced, among others, this beautifully crafted red wine.
Laurent selects exclusively from terraced vineyards in the Aude Valley at the foothills of the Pyrenees. Due to the limited yield of around 50 hl/ha, the grapes reach the correct skin ripeness. This is crucial for a pure, ripe aroma and taste in the wine.
After fermentation in stainless steel tanks, approximately a quarter of the production ages in oak casks for six to nine months. The result is impressive, not due to high concentration, but precisely because of the accessible, crystal-clear, and elegant taste with the seductive nuance of new oak.
Drinks with
Smooth, fruity red wine to drink slightly chilled. Ideal as an aperitif or with light dishes, such as beetroot salad, roasted guinea fowl with pomegranate, or cannelloni with spinach and ricotta.
Tasting note
Light ruby red wine with a fruity aroma of ripe cherry, wild strawberry, redcurrant, and rosehip. The taste is intensely juicy with pure red fruit, invigorating acidity, and fine tannins. Slightly spicy in the elegant finish.
Shelf life
Now beautiful and keeps for approximately 4 years after harvest.
