| Delicate and juicy; delicious lightly chilled |
Description
What a fantastic natural wine from Anne Collard, also owner of Mourgues du Grès in Costières de Nîmes. For several years now, she has had her own project in the Rhône, in line with her passion for the Grenache grape. This delicious Vin de France is a convincing calling card.
Anne makes the wine primarily from Grenache, with a small amount of Syrah and Mourvèdre. She cultivates her vineyards according to organic and biodynamic principles – just like in Nîmes. The relatively cool microclimate (thanks to morning mist and the cool Mistral wind) ensures grapes with sufficient freshness.
Anne harvests them by hand. A short fermentation follows in the cellar. After pressing, the wine ages for ten months in concrete tanks. Only minimal sulfites are used for bottling.
The Shi Fu Mi is therefore a wonderfully pure, juicy, and light-footed natural wine. It has subtle aromas of raspberry, cherry, and freshly ground black pepper, and is refined, juicy, and slightly spicy on the palate. Preferably drink it slightly chilled, for example with charcuterie, quiche, or ratatouille.
And then a word about the special name: Shi fu mi is Japanese for one, two, three and refers to the countdown for the game of rock-paper-scissors, also known as chifoumi in French. The stone is also called caillou, and the paper feuille, which means leaf. The stone represents the pebbles (cailloux) in the vineyard, the leaf the Grenache grape, and finally, the scissors vineyard management – see also the beautiful label. And that is how rock-paper-scissors make this wonderful wine of pleasure.
