Equinoxe Chardonnay
The Equinoxe series represents the new L'Arjolle style, pioneered by winemaker François Teisserenc. For this rich Chardonnay, he allows the grapes to ripen longer, resulting in a fuller, rounder wine. (Hence the name; the grapes are harvested around the autumnal equinox.) Nevertheless, François manages to retain the freshness and refinement. A remarkable achievement!
François uses only the first and best portion of the very soft pressing and ferments two-thirds of the juice in oak barrels, giving the woody influence a distinct presence. After bâtonnage, the wine matures for ten months on its lees in the same barrels. The remaining portion ferments and matures in tanks.
The result is a beautiful, dry Chardonnay with notes of toast, ripe apple, mango, and a touch of oak. Its seductive, luxurious, and mild flavor makes it ideal for enjoying on its own or pairing with delicious dishes such as scallops Saint-Jacques, plaice, or poultry.
