It is not always necessary to reinvent the wheel. The young Sébastien Dampt has understood this all too well. It is precisely with this approach that he is one of the new generation of winemakers putting Chablis back in the spotlight. Winemaking here is done as in times of old: traditionally and without frills. As simple as that approach may sound, the result is impressive.
The roots of the Dampt family go back 150 years in the winemaking history of Chablis, the northernmost part of Burgundy. For generations, the Dampts have specialized in the restrained, chalk-dry, and elegant style of Chardonnay that is so typical of the region. Sébastien, therefore, learned the trade from a young age. After training in Beaune, he gained experience both at home and abroad. In 2007, by then seasoned and experienced, he started his own domain.
Sébastien harvests the grapes for his Chablis Villages from various plots, the largest of which boasts vines no less than 45 years old. The vinification is subsequently minimalist: after pressing the grapes, the wine ferments and ages in stainless steel tanks. This ensures not only the refined, bone-dry Chablis character but also a light flinty aroma as a sign of terroir expression in the wine.
This is Chablis as Chablis is meant to be. Bone-dry, chalky, and with notes of Granny Smith apple and citrus fruits. Delicious as an aperitif, or with oysters and light fish dishes.
Shelf life
Ready to drink from one year after the harvest and easily keeps for four to five years.
