Striking, fresh white wine with encruzado grapes from Dao in Portugal

Portuguese dry white wine with the scent of flowers and ripe yellow fruit. Nice and juicy and balanced in taste. Good to combine with fish, slightly spicy salads or for example pasta with chicken.
The grapes for this white dão come from the Silgueiros region, with a strongly granite soil type. Wine maker Carlos Silva chooses with 60% for a high share of the encruzzo grape; according to Silva the 'queen' of the grapes in the Dão area. He supplements it with malvazia, bical and cerceal branco. Around the second and third week of September, they are harvested and fermented. As a modern winemaker he chooses almost automatically for a cool fermentation and no oak maturation, so that the grape aromas are well preserved. The result: a characterful, fresh wine with the unique characteristics of unknown, indigenous grapes. A special combination.
