Spicy aroma. The taste starts round and soft; the development is full and balanced, and the finish aromatic. An excellent accompaniment to grilled lamb or beef dishes. Ready to drink from two years after the harvest; keeps for up to five years after the harvest.

Pierre-André Ournac is the place to be if you are looking for artisanal, pure wines that reflect the authentic taste of the region. Take the Cuvée Olric, made from 50% Syrah, 25% Mourvèdre, and 25% Carignan from twenty-five-year-old vines. The wine does not age in oak barrels, but for fifteen months in concrete tanks. This method of aging reveals the purest expression of the grape variety, such as the aromas of tobacco, leather, and mild spices derived from the Mourvèdre. The taste is full-bodied, with freshness. The soft, ripe tannins demonstrate the great expertise in the vineyard and cellar. At the oenologists' competition, the Vinalies Internationales, they know how to appreciate this: this wine was awarded a silver medal. Not an artificial wine, but Minervois in its purest form.
