Tasting notes Coudoulet Pinot Gris
Dry white Pinot Gris from the Langedoc. Pale yellow color. A crystal-clear aroma with notes of pear, melon, and ripe apple. A beautifully full and juicy structure with a fresh nuance and a mild finish. A delicious aperitif wine, ideal with light (fish) dishes and summer salads. Keeps well for at least two years after harvest.
Description
Pinot Gris comes in many forms and regions. From light, thin-flavored Italian slops to rich, sweet Alsatians. Fortunately, this grape is also gaining ground in the Languedoc, where conditions are proving ideal. Camille Ournac makes a dry white wine from it that we particularly enjoy.
The vines on the 'Le Loup' plot are now 12 years old and deliver beautiful quality.
The grapes are harvested at night, left to macerate with the skins for 24 hours, and then fermented. The wine then remains in contact with the spent yeast cells ("sur lie"), stirring regularly for three months. This technique, called "bâtonnage," produces a delicious juiciness with added complexity. The mild flavor with a fresh nuance will be widely appreciated.
