Long description
Domaine de Panisse is the recently acquired winery of Marilou and Axel Vacheron, fourth-generation winemakers of the famous Châteauneuf-du-Pape estate Clos de Caillou. They bring with them the vast experience of Caillou's winemaker, Bruno Gaspard, but Marilou and Axel view it as a challenge to put their own stamp on this small, fine winery located less than a kilometer from Caillou. The planted grapes – Grenache, Syrah, Mourvèdre, and Cinsaut – are organically grown and harvested with very low yields in the vineyard, allowing the wines to have maximum terroir expression. For the Châteauneuf-du-Pape, for example, this is only 25 hectoliters per hectare. After selection in the vineyard, the grapes are harvested by hand and selected again upon arrival at the cellar. After complete destemming, spontaneous fermentation takes place in concrete vats, and subsequently the wine ages for 14 months in 500-liter and smaller 225-liter French oak barrels. The result is a concentrated, premium wine with refinement and a beautiful length of flavor.

Ripe, spicy red wine to drink with various stews or grilled dishes, such as beef shank with savory and sauerkraut, lamb chops with braised eggplant, or ratatouille.
Tasting note
Light ruby red color and subtle aroma of wild strawberry, cherry, cedarwood, and clove. Soft and luscious on the palate with jammy fruit, fine tannins, and mild acidity. The finish is long with nuances of pepper and bay leaf.
