One of Portugal's most classic wine regions has entered a new phase. Young winemakers have broken with the drying, ripe, and somewhat old-fashioned style of the previous generation. They are now producing elegant, world-class wines on the characteristic granite soils of the Dão. A fine example is the small Casa da Passarella, where Paulo Nunes manages to transform indigenous grapes into quality wine in the Serra da Estrela sub-region.

The A Descoberta white is made from Malvasia, Verdelho, and Encruzado grapes that are chilled and macerated for several hours prior to fermentation. After this, the white Dão ferments in stainless steel tanks. Paulo Nunes then stirs the tank regularly to ensure optimal contact between the yeast cells and the wine. This 'bâtonnage' technique creates a subtle flavor nuance that complements the freshness of the Encruzado grape in particular.

The Descoberta (discovery) is a wonderful introduction to the new generation of white Dão wines; made in a modern way, but preserving the unique terroir of this region and the grape expression.
