Paulo Nunes from the Serra da Estrela region
One of Portugal's most classic wine regions has entered a new phase. Young winemakers have broken with the dry, ripe, and somewhat old-fashioned style of the previous generation. They are now crafting elegant, world-class wines from the characteristic granite soils of the Dão. A prime example is the small Casa da Passarella, where Paulo Nunes, in the Serra da Estrela subregion, is transforming indigenous grapes into high-quality wine.
The A Descoberta white is made from Malvasia, Verdelho, and Encruzado grapes that are chilled and macerated for several hours prior to fermentation. The white Dão then ferments in steel tanks. Paulo Nunes then regularly stirs the tank to ensure optimal contact between the yeast cells and the wine. This "bâtonnage" technique creates a mild flavor nuance that complements the freshness of the Encruzado grapes in particular.
The Descoberta (discovery) is a wonderful introduction to the new generation of white dao wines; made in a modern way, yet preserving the unique terroir of this region and the grape's expression.

The days of heavy, ponderous white wines from Spain and Portugal are thankfully long gone. The new generation of white wines is fiercely competing with other producers. But modern wine technology alone isn't enough to differentiate. The distinctive white dão from Casa da Passarella, with its 100% indigenous grape blend, is of high quality.
