Information
| Refinement instead of exuberant candy scents | |
| Highly skilled vinification by Hugh Ryman | |
| A lovely accompaniment to refined fish dishes. |
A fresh Sauvignon Blanc
A juicy, crisp, dry Bergerac with delicate yellow fruit on the nose and light citrus notes. The flavor is aromatic and has a long, fresh, and balanced finish.
Mirabelle
Fresh Sauvignon grapes, complemented by ripe, mild Sémillon (15%), form the basis of this refined Bergerac. The grapes are harvested at night so they can be processed in a cool environment. After harvesting, the skins are briefly macerated, which maximizes the fruit nuances.
To add complexity to the blend, winemaker Hugh Ryman ferments approximately 20% of the wine in used oak barrels. The wine then remains in contact with the yeast cells for nearly four months and undergoes minimal filtration. The result is superb: refined, fragrant, and juicy, making it an ideal non-dominant accompaniment to fine dishes.
A stark contrast to the often large-scale wines, which, thanks to technical interventions in the cellar, have expressive aromas of candy and boxwood. A staple in our range for years.
