One of the most classic wine regions in Portugal has entered a new phase. Young winemakers have broken with the drying, matured style of the previous generation. On the so characteristic granite floor in the Dão they now make elegant, world-class wine. A good example is the small Casa da Passarella, where Paulo Nunes manages to process the indigenous grapes into great wines. This A Descoberta is made from touriga nacional, tinta roriz, alfrocheiro and jaen grapes that ferment in open vats. The ripening takes place mainly in cement tanks and for a small part in oak casks. The result: a complex, refined red wine. Tip: aerate this wine in a carafe.
