Description
When Jean-Louis Sirugue brought his son Arnaud back to work at the family domain, he asked him to do something with the ailing burgundy passetout grains.
Sirugue made this light red wine from two thirds of Pinot Noir and one third of Gamay grapes. The Bourgogne passetoutgrains appellation went out of fashion years ago and there is virtually no sales for it except in France.
What to do with the grapes? It is possible to make a crémant de bourgogne or a rosé. Arnaud immediately opted for the latter because he gained knowledge of the production of quality rosé during an internship in Provence.
Arnaud selected 100% pinot mustard grape vines of at least 30 years old for this unique burgundy. From the grapes he made an excellent dry and refined rosé in the style of a Provence cru classé.
Can the wine be called passetoutgrains? This suggests that the inferior gamay grape is also used. According to Sirugue, because there is a minimum of one third of pinot noir prescribed, no maximum.
