Pierre Clément has brought his fine dry white Sauvignon from the limestone vineyards in Menetou-Salon to an outstanding level of quality. Thanks to its great culinary versatility, this intensely pure white wine is a favorite of sommeliers in countless restaurants.

Pierre Clément's strong point is the consistent and high quality of this fresh and appetite-stimulating wine. After harvesting, the best grapes are selected on sorting tables. One-third of the harvest is briefly macerated with the skins and then pressed with low pressure. After fermentation, the wine ages 'sur lie'. This takes place during the winter months; the wine is not bottled until March.

Clément produces a quintessential Sauvignon, and his wine ranks high on the list of most sought-after white Loire wines. Both the Sauvignon Blanc and Pinot Noir grapes ripened optimally in 2015, with sufficient sugars and retaining beautiful acidity.
