Burgundy producer Badet Clement
For the owners and oenologists of Burgundy producer Badet Clement, it is a challenge to create a Burgundy clone in the south of France. Laurent Delaunay, in particular, is a specialist in finding vineyards that impart a characteristic expression to the grape. For the Pontificis white, she selected cool-situated Chardonnay vineyards and ripe Viognier. Following fermentation, a classic aging process takes place in small oak barrels, where batonnage, originally from Burgundy, is also applied. As a result, the wine tastes full and creamy.
