Many white wines are typically made for quick consumption. But there are also those that improve significantly in taste after a few months—or even years—of bottle aging. Like this beautiful dry white wine from Pierre-André Ournac. On his small family estate, he produces an exceptional quality Viognier from the grapes of old vines.

The fact that this particular white wine benefits from bottle aging is undoubtedly due to the low yield in the vineyard and the associated concentration of flavor. Now, more than a year after the harvest, the fermentation aromas have disappeared. They have given way to beautiful aromas of peach, apple, and flowers, characteristic of good Viognier.

Moreover, these notes are present in a restrained and refined manner, allowing the full and creamy yet fresh flavor to pair perfectly with refined fish dishes. Wine of this level convincingly demonstrates that good quality can be found in this South French region at a very competitive price.
