With its fifty hectares of biodynamically farmed vineyards near Lake Kaltern (Lago di Caldaro), Manincor is among the absolute top wineries in Alto Adige, Northern Italy. The region owes its reputation primarily to its flawless, single-varietal white wines, but Manincor also produces exciting blends in addition to single-varietal wines. Sophie is a prime example.

Sophie is made primarily from Chardonnay, supplemented with a small percentage of Viognier and Sauvignon Blanc, which gives the wine its unique character. Once the grapes are pressed, a short maceration of the skins enhances aroma and structure. After spontaneous fermentation in wooden barrels, the wine is aged on the yeasts for several months. This adds structure and complexity. The result is an impressive white wine characterized by charm and refinement, as well as power and roundness.

To best express the richness and complexity of this characterful wine, we recommend decanting and serving it in large Burgundy glasses.
